Made with Président Feta Cheese

Salad Days of Summer
Barbara, Dana Point, CA

A crunchy, bright and flavorful salad full of the taste of summer

INGREDIENTS:

  • 1 cup Président® Feta
  • salt and pepper to taste
  • 4-6 fresh basil leaves, torn
  • 2 cloves finely minced garlic
  • 1/4 cup basalmic vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup zucchini, diced about the size of the peppers
  • 1/2 cup red or yellow bell pepper, diced
  • 1 cup teardrop tomatoes or cherry tomatoes quartered
  • 1 cup red onion, finely diced
  • 2 cups green beans, blanched, cut into 1 inch pieces

INSTRUCTIONS:

Combine the green beans, onion, tomatoes, bell pepper and zucchini in a bowl. Separately, make a vinaigrette with the olive oil, balsamic and garlic. Pour dressing over vegetables and let marinate about an hour or more at room temperature. Taste for salt and pepper and add as needed. Before serving, top with President Feta and torn basil leaves to taste. Serves about 10, 1/2-cup servings.
