Feta and Mango Black Bean Salsa Salad

INGREDIENTS:
- 1 cup Président® Feta
- 6 cups Spring Green Mix
- 1/4 tsp ground black pepper
- 1 tsp salt
- 6 oz crumbled feta cheese
- 1 cup canned black beans, drained and washed
- 1 Tbsp chopped jalepeno
- 2 Tbsp lemon juice
- 1/4 tsp cumin
- 1/4 cup chopped cilantro
- 1/3 cup chopped onion
- 1 cup chopped tomato
- 1 cup chopped mango
INSTRUCTIONS:
Peal and cut mangos into 1/2 inch cubes. Mix with tomatoes, onion and cilantro. Add cumin, juice from the lemon and jalapeno. Fold in beans and cheese. Mix well and adjust to taste with salt and pepper. Serve chilled over spring greens.
