1-Combine oil, oregano, and pepper in a small bowl. Drizzle over mozzarella. Let stand for at least 20 minutes. 2-Divide arugula among 4 plates 3- cut peaches into wedges 4- slice cucumbers 5- top each arugula with a quarter of the peaches, cucumbers and mozzarella. 6- drizzle with 1 tablespoon of vinaigrette and serve.
