ChiChi and Black Bean Salad

Garbanzo Beans (chichi), Black Beans ,
INGREDIENTS:
- 1 1/2 cup Président® Feta
- 1/2 cup olive oil
- 1 fresh squeezed lemon or 1/4 cup lemon juice from bottle
- salt to taste
- 2 Tbsp oregano
- 2 cloves garlic
- 1 chopped tomato
- 1/2 cup chopped onion
- 1 cup sliced cucumber
- 2 cups black pitted olives (1 can drained)
- 2 cups black beans (1 can drained)
- 2 cups garbanzo beans (1 can drained)
- 1/2 cup mozzarella fresca
INSTRUCTIONS:
Mix all ingredients in bowl
pour
lemon juice about 1/4 cup from fresh squeezed or bottle
olive oil about 1/2 cup
put in fridge at least 2 hours before serving..is good for a few days..for company serve it over lettuce greens
It's easy. It's refreshing and it is one of my husband's favorites.
